This recipe is easily scaled to fit the number of people being served. I use it when it's just my daughter and me home for dinner.
Ingredients | Easy Healthy Family Dinners Uk1 tablespoon vegetable oil8 ounces bulk Italian sausage1 potato, peeled and diced¼ onion, chopped1 cup frozen mixed vegetablessalt and pepper to taste¼ cup shredded Cheddar cheeseDirectionsHeat the vegetable oil in a large skillet over medium heat. Stir in the sausage, and cook until crumbly and just slightly pink, about 5 minutes. Stir in the diced potato and onion. Continue cooking until the potatoes are tender and have lightly browned, 10 to 15 minutes.Once the potatoes are tender, stir in the mixed vegetables until hot. Season to taste with salt and pepper.
